Ingredienti:<br />
- 4 panini raffermi bagnati con un po di latte tiepido<br />
- 1 hg di prosciutto cotto<br />
- 1 hg. di mortadella<br />
- 2 uova<br />
- prezzemolo qb<br />
- parmigiano grattugiato<br />
- pangrattato evtl<br />
<br />Tritate il prosciutto con la mortadella. Aggiungete poi il pane raffermo strizzato, le uova, il prezzemolo e il formaggio grattugiato.<br />
E amalgamate bene il tutto.<br />
Se l'impasto risulta troppo molle aggiungete un po' di pangrattato.<br />
Formate delle palline grandi come albicocche aiutandovi con una spolverata di farina.<br />
Lessate in brodo caldo per una ventina di minuti facendoli cuocere a fiamma media.<br />

Gratt.<br />- Farina bianca qb<br />- Sale qb<br /><o:p> <br /></o:p>Schiacciate le patate
sulla spianatoia quando sono ancora calde.<br />Tritate le castagne e
versatele sulle patate.<br /> Aggiungete il formaggio
grattugiate, un pizzico di sale e le uova e impastate aggiungendo un po’ di
farina fino ad ottenere un impasto omogeneo.<br />Ricavate dei
salsicciotti e tagliate gli gnocchi con un coltello.<br />Lessate in abbondante
acqua salata e scolate con la schiumarola quando vengono a galla.<br />Condite a piacere.</span></div>
